Why would You NOT set the background to Gray, when it is known that Gray RESTS the eyes?

		<description>I am always dismayed when I see very high dollar websites by major companies (Fortune 100) and yes many developers, ignore some basic rules with regards to color, especially readability. How many website do you see with yellow text on a blue background and similar usability faux pas. The projector uses light from a bright bulb to create colors. How does that projector create black on a white background when black is the absence of light? I have tried to look up the answer more that once using google but have never come up with an answer no matter how I worded my query.</description>

What I would like to see next is, the next step to creating a custom skin. That is, using swing or JavaFX show an example of creating a skin based on a color scheme. That would be great, I think.
